Ingredients
3 lb beef chuck roast (well-marbled)
1 lb baby potatoes, halved
4 large carrots, cut into 2-inch chunks
2 yellow onions, thickly sliced
3 tablespoons olive oil
4 cloves garlic, smashed
2 cups beef broth
½ cup red wine (optional, or substitute with more broth)
2 sprigs fresh rosemary
3 sprigs fresh thyme
Salt and coarse black pepper to taste.
Instructions
