Introduction

Slow-Roasted Beef Pot Roast is the ultimate comfort food. A well-marbled beef chuck roast is slowly cooked with aromatic vegetables and savory broth until it becomes incredibly tender. The long cooking time allows the meat to absorb deep flavors while creating a rich, natural gravy.

Ingredients

3 lb beef chuck roast (well-marbled)

1 lb baby potatoes, halved

4 large carrots, cut into 2-inch chunks

2 yellow onions, thickly sliced

3 tablespoons olive oil

4 cloves garlic, smashed

2 cups beef broth

½ cup red wine (optional, or substitute with more broth)

2 sprigs fresh rosemary

3 sprigs fresh thyme

Salt and coarse black pepper to taste.

Instructions

Preheat the oven to 325°F (160°C) so the beef cooks slowly and becomes tender.

Season the beef roast generously on all sides with salt and black pepper.
