- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (225g) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- Pink food coloring (optional)
Cheesecake Filling
- 8 oz (225g) cream cheese, softened
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
Strawberry Crunch Coating
- 18 Golden Oreo cookies
- 1 cup freeze-dried strawberries
- 3 tablespoons melted butter
Decoration
- 1 cup white chocolate, melted
- Freeze-dried strawberry crumbs
- Fresh strawberry slices (optional)

Instructions
Step 1
Beat together:
- Cream cheese
- Powdered sugar
- Vanilla extract
Freeze small spoonfuls of the filling on a parchment-lined tray for 30 minutes.
Step 2
Whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
Set aside.
Step 3
Beat the butter and sugar until light and fluffy.
Mix in the egg, vanilla, and a few drops of pink food coloring if using.
Gradually mix in the dry ingredients until a soft dough forms.
Chill for 30 minutes.
Step 4
Blend the Golden Oreos into fine crumbs.

Cover with another piece of dough and seal completely.
